Guinness and Bailey's: The Perfect Cupcake
Better late than never... Happy St. Patty's Day! Who doesn't like a good Irish Car Bomb (in cupcake form)? While researching Car Bomb cupcake recipes for this past St. Patty's Day, I came across the site Suzie Bakes, which had a great adaption of this fabulous combo. I typically bake for the fun of it and then force my creations upon people, hardly eating much of what I make, not these! I don't want to think of how many I had! Delicious.

1 bottle Guinness
1 cup unsalted butter
3/4 cup unsweetened cocoa powder
2 cups all purpose flour
2 cups sugar
1 1/2 teaspoons baking soda
3/4 teaspoon salt
2 large eggs
2/3 cup sour cream
1 cup unsalted butter

2/3 cup sour cream
Bake Temp: 350 degrees Bake Time: 17 minutes
- In large bowl, combine flour, sugar, baking soda and salt. Set aside.
- Simmer Guinness and butter in a saucepan over medium heat.
- Add coco powder to Guinness mix and whisk until smooth. Cool slightly.
- Using mixer, beat eggs and sour cream in a large bowl.
- Add Guinness mixture to your egg mixture, beating until just combined.
- Add four mixture and mix at low speed until completely combined.
- Fill cupcakes 2/3 - 3/4 full with batter. Bake for approximately 17 minutes.
Frosting
1/2 cup unsalted butter, softened
3-4 cups powdered sugar
3 tablespoons Bailey's
1 tablespoon milk
- Beat butter in large mixing bowl until creamy.
- Gradually add the sugar (1 cup at a time) beating well after each addition, until icing is thick enough. You may or may not use all of the powdered sugar.
- Add Bailey's and milk, mixing until just combined. And remember, more Bailey's never hurts anything:)

- Once your cupcakes have fully cooled, fill your pastry bag with frosting.
- Starting at the middle, slowly spiral the frosting around the top of the cupcake.
- Most importantly, have fun with decorating, do whatever you want with it!
Tips & Tricks:
- Always let your cupcakes completely cool before frosting
- Taste the frosting as you go along- you might want to add more Bailey's depending on how you like it
- Chill frosting for a few minutes if it becomes too warm and difficult to control
